Asparagus And Zucchini Frittata By Kathy Burris

Great "do ahead" brunch casserole

Ingredients

oz frozen asparagus spears cut into 1 1/2 bits
1
small yellow pepper cut into strips
1/2
zucchini halved and slices
1/2
chopped onion
1/4
roasted red peppers drained and sliced
1/3
cup mozzarella
8
large eggs
1/2
milk
1
tbs dill
3/4
tsp salt
1
tsp black pepper
2
tbs flour

-4 tbsp parmesan cheese
Directions
1.
1- heat oven to 350 degrees-coat 2 qt glass rectangular baking dish with PAM

2-In large sauce pan, bring 1' water to boil, add asparagus, pepper, zucchini and onion
3.
simmer 'til tender. Drain well. Stir in red roasted peppers. Spread mixture evenly in baking dish and sprinkle 1/2 mozzarella cheese.

3-Whisk eggs and milk. Pour over veggies. Bake uncovered for about 35 minutes. Sprinkle with remaining mozzarella and Parmesan
