Mini Apple Pies

There's something completely irresistible about miniature food - and these petite apple pies are no exception. Great as desserts or lunchbox treats for kids.

Ingredients

apples (I like Granny Smith)
1/4
cup sugar
1/4
cup brown sugar
1
cup all-purpose baking flour (for dough)

tbsp butter, cold and cubed
2
tbsp (or a little more) ice water
1
tsp salt
1
tsp sugar
1
tsp cinnamon
1/2
tsp nutmeg
1
tsp vanilla extract
1
tbsp flour (for filling)
1
container caramel sauce (optional)
1
pt vanilla bean ice cream
Directions
1.
For the dough: cut butter into small cubes. Using a mixing bowl and a fork, mix butter into the flour. You can also use a food processor if you have one. Next, add salt and sugar.

Add ice water and mix well until a dough forms. Start with the 2 tablespoons of ice water, and if it isn’t coming together like a dough, start adding a little bit more at a time. Wrap dough in saran wrap and leave in the fridge for 30 minutes.

Peel and dice the apples. Mix together the sugar, brown sugar, cinnamon, nutmeg, salt, flour, and vanilla extract. Then, mix in chopped apples.
4.
Place the cupcake tin on a baking sheet and bake at 375 degrees for about 35-40 minutes, or until they start to lightly brown on the top.
5.
Place on a serving plate. Add a large scoop of ice cream on top of each pie, lightly drizzle caramel sauce in a circle motion around pie.
