Apple Date Bars

This recipe comes to us courtesy of the Renegade Lunch Lady Chef Ann Cooper and her book Lunch Lessons: Changing the Way We Feed our Children.

Ingredients

tbs butter, softened, plus extra for the pan (use unsweetened apple sauce)

cup packed brown sugar
1
large egg

tbs 2% milk
1/2
cup peeled and chopped apple
1 1/3
cup all-purpose flour
3/4
tsp baking soda
1/2
tsp ground cinnamon
1/4
tsp ground cloves
1/4
tsp ground nutmeg
1/2
cup walnut pieces
1/2
cup dried dates, pitted and chopped
Directions
1.
Preheat the oven to 350°F. Grease a 9- x 12-inch pan.

Cream the butter and brown sugar in a large mixing bowl. Mix in the egg and milk. Stir in the apple.
3.
Add the flour, baking soda, cinnamon, cloves, and nutmeg and mix thoroughly. Stir in the nuts and dates.
4.
Spread batter in the greased pan and bake for 20 to 25 minutes, until firm to the touch. Remove from the oven and allow to cool for 10 minutes before cutting in 2- x 3-inch pieces.
