Parsnip And Pear Soup

Ingredients

-6 large parsnips, peeled and cut into small chunks
4
tbs olive oil, divided
2
tbs pure maple syrup
6
pears, peeled and diced
3
onions, diced
10
cup of chicken broth
salt and pepper to taste
Directions
1.
Preheat oven to 400 degrees
2.
Place parsnips on a large roasting pan in a single layer and drizzle with 2 tablespoons of olive oil and maple syrup
3.
Roast in oven until soft and golden, approximately 10 minutes, checking to make sure the parsnips do not burn.
4.
Meanwhile in a large stockpot over medium heat, sauté pear and onion in remaining 2 tablespoons of olive oil until soft. Add roasted parsnips.
5.
Add broth and bring to a boil.
6.
Simmer, covered for 30 minutes. Season with salt and pepper to taste.
7.
Puree with a hand blender until smooth.
