Three Cheese Baked Rotini

This creamy pasta is filled with flavor and excellent for summer or winter.

Ingredients

cups heavy cream

fresh tomatoes (chopped coarsely)
1/2
cup freshly grated pecorino Romano cheese
1/2
cup shredded Fontina cheese
1/4
lb mozzarella cheese, thinly sliced

tsp kosher salt
6
fresh basil leaves, coarsely chopped
1
lb rotini
4
tbsp unsalted butter, thinly sliced

tbsp unsalted butter
Directions
1.
Heat oven to 500 degrees. Bring a large pot of salted water to a boil.

In a medium mixing bowl, combine all ingredients except the pasta and butter. Stir well to combine. Add the pasta into the boiling water for 4 minutes.

Drain in a colander and add to the ingredients in the mixing bowl, tossing to combine. Place the pasta in a thin (1-inch) layer in a large baking dish. Dab butter on top, and bake until bubbly and brown on top (about 7-10 minutes).

Stir gently for a minute or two and serve.
