Gluten Free Morning Glory Muffins

You would never know these incredibly moist and delicious muffins were gluten free! Full of healthy fruits and veggies. A great way to start your morning!

Ingredients
1/2
cup raisins
1
cup gluten free multi-purpose flour
1/2
cup brown sugar
1
tsp cinnamon
1/4
tsp ginger
1
tsp baking soda
1/2
tsp xantham gum
1/4
tsp salt
1
cup peeled, grated carrots
1/2
cup grated apple
1/2
cup grated coconut
1/2
cup chopped walnuts
2
large eggs
1/3
cup vegetable oil
1
tsp vanilla
2
tbl water
Directions
1.
Preheat oven to 375 degrees. Grease or line a 12 cup muffin pan.
2.
Soak raisins by covering in hot water. Set aside.
3.
Whisk together dry ingredients.
4.
Stir the carrots apple, coconut, and walnuts into the dry mixture.
5.
Whisk together the eggs, oil, vanilla, and water. Add to dry mixture.
6.
Stir in soaked, drained raisins.
7.
Using a muffin scoop, fill each muffin pan well equally. Each well will be almost full.
8.
Bake for 24-26 minutes, or until tops spring back lightly and muffins are a nice, dark golden brown.
