Cashew Chicken

This simple recipe is so incredibly delicious. It quickly became a family favorite!

Ingredients
2
lb boneless skinless chicken breasts
1/4
cup flour
1/2
tsp black pepper
1
tbl canola oil
1/4
cup soy sauce
2
tbl rice vinegar
2
tbl ketchup
1
tbl brown sugar
1
garlic clove minced
1/2
tsp grated ginger
1/4
tsp red pepper flakes
1/2
cup unsalted cashews
fresh veggies of your choice: onions, peppers, water chesnuts, broccoli, peas, carrots, etc
Directions
1.
Combine flour and pepper in resealable bag. Add chicken and shake to coat.
2.
Heat oil in skillet over medium high heat and brown chicken about 2 minutes on each side.
3.
Place chicken in slow cooker, or leave in skillet (if cooking quick method).
4.
Combine soy sauce, vinegar, ketchup, sugar, garlic, ginger, and pepper flakes. Pour over chicken.
5.
Cook on low for 3 to 4 hours, if using a slow cooker. Cook in skillet on medium low for about 30 minutes.
6.
Steam vegetables and mix in with chicken just before serving.
7.
Add cashews and stir.
8.
Serve with rice or rice noodles.
