Gluten Free Double Chocolate Cookies

cup sugar

cup cocoa powder
1/4
cup rice flour
1/4
cup tapioca flour
1/4
cup sorghum flour
1/4
cup almond flour
1/2
tsp baking soda
1/2
tsp salt
1/4
tsp xantham gum
4
oz chocolate chips
1/2
cup butter
1
tsp vanilla
2
eggs
4
oz chocolate chips
Directions
1.
Preheat oven to 325 degrees. Line baking sheet with parchment paper or silicon baking mat.
2.
mix sugar, cocoa, flours, baking soda, salt, and xanthum gum in large bowl.
3.
Melt 4 ounces of chocolate chips with butter and vanilla in double boiler. Remove from heat.
4.
Stir in eggs to chocolate, slowly pour mixture into flour mixture. Stir until well mixed.
5.
Fold remaining chocolate chips into the batter.
6.
Drop by 1 tbl balls onto prepared baking sheet, placing at least 2 inches apart.
7.
Bake until cookies are spread and slightly cracked, about 12-15 minutes.
8.
Cool on pan for 10 minutes before removing to wire rack. Allow to cool on racks completely.
