Pollo Limon Y Olivas Verdes

lb skinned chicken or chicken breast

tbs olive oil

medium onion, chopped
1/4
cup chopped garlic or garlic puree
1
cup plus 1.5 cups water
1/8
tsp saffron
1/2
tsp ground ginger
1/2
tsp ground cumin
1/2
tsp paprika
1/4
tsp salt
grated peel of 2 lemons
3
tbs lemon juice
1/2
cup green olives, pitted and minced
2
tbs finely minced fresh cilantro
fresh black pepper
Directions
1.
In a large skillet, heat the oil over medium heat. Saute the chicken and the onion-garlic mixture until it has softened.

Stir in the 1 cup of water and saffron, ginger, cumin, paprika, salt and lemon peel. Bring to a boil, and then reduce the heat and simmer, covered, for 35 minutes, adding remaining 1.5 cups water as needed to keep a broth.
3.
Add the lemon juice, olives, cilantro and pepper. Simmer gently for 5 minutes. Serve with rice or arabic bread.
