Freekah Salad

Freekah is a cereal food made from green durum wheat that is roasted and rubbed to create its unique flavor. It is an ancient Arabian dish derived from Levantine and North African cuisines, remaining popular in many countries of the eastern Mediterranean Basin where durum wheat originated.

Ingredients
freekah soaked in water
salt
chopped fresh parsley
chopped fresh mint
thinly sliced celery
chickpeas, drained and rinsed
fresh lemon juice, to taste
lightly roasted cumin seeds
garlic clove, minced
extra-virgin olive oil
white onion
bell pepper
Directions

Heat a medium sized saucepan over medium heat and add freekah. Toast in the dry pan for 5 minutes. Add water and bring to a boil

Reduce heat to low, cover and simmer 20 to 25 minutes or until water has been absorbed. Turn off heat and take off the lid. Cover the pot with aluminum foil and return lid. Let sit for at least 10 minutes. Uncover and allow freekah to cool for another 10 minutes.

In a large bowl, combine freekah, chopped herbs, celery, white onion, bell peppers and chickpeas, then mix together. In a small bowl, whisk together lemon juice, cumin, garlic, salt and olive oil; toss with salad. Serve right away or let sit for up to 1 hour before serving.
