Lemon Blueberry Tart

Tart with lemon filling and fresh blueberries

Ingredients
Crust

STICKS Unsalted Butter
1/2
CUP Confectioner's Sugar

TSP Vanilla Extract
1/4
TSP Salt
2 1/4
CUPS Flour
Filling
2
CUPS Sugar
1/3
CUP Flour

Large Eggs
2
Large Lemons - Juice
1
CUP Fresh Blueberries
1
TSP Vanilla Extract
1/4
CUP Confectioners' Sugar
Directions
1.
For the crust: In a bowl, put cream, butter and sugar.
2.
Add salt, vanilla and flour.
3.
Mix until blended.
4.
Form a ball and flatten to a disk.
5.
Grease a two-piece tart pan.
6.
Press dough into the pan.
7.
Bake for 20 minutes, or until edges are golden.
8.
For the filling: In a large bowl, mix sugar and flour.
9.
Whisk in eggs until smooth.
10.
Stir in lemon juice and zest.
11.
Fold in berries.
12.
Pour filling over crust and return to oven for about 30 minutes, or until filling sets.
13.
Let cool in pan on a wire rack.
14.
When the tart is completely cool, remove rim from tart. (The bottom will easily separate by sliding a knife under it).
15.
Sprinkle with confectioner's sugar.
