Chicken A La Josephine Dano

An easy way to make a roasted chicken that has great flavor. Once you season it, you can let the oven do all the work! Goes great with a salad and rice too.

Ingredients

tbls EVOO
2
tsp Salt
2
tsp Pepper
2
tsp Garlic Powder
1
Lemon
1
Chopped Garlic
1
Ginger julienne or sliced ginger
Directions
1.
Take the chicken out of the wrap and rinse thoroughly.
2.
Dry the chicken adequately so the EVOO adheres to the chicken when applied
3.
Preheat Oven to 400
4.
Put the cast iron skillet in the 400 oven while preheating
5.
Chop everything while preheating
6.
Open chicken, etc
7.
Stuff the chicken with the lemon ( slices or 4 quarters), chopped garlic, and ginger.
8.
Coat the chicken with the EVOO, Salt, Pepper, Garlic Powder, and extra lemon juice
9.
Tie the legs together
10.
Put chicken in the cast iron skillet in the over
11.
Will cook for 55 minutes total
12.
Start at 400 degrees. Leave in for 20 minutes.
13.
Then go to 350 degrees for 35 minutes.
14.
(You don't have to necessarily turn it over after the first 20 minutes).
15.
Take out (careful, it's hot!) cut and enjoy!
