Corn Bisque With Smoked Sausage

Double the recipe and serve to company! It never fails.

Ingredients

(16 oz) package of smoke sausage
1
medium yellow onion, chopped
1/4
cup of butter
1/4
cup of flour
1/2
tsp salt
1/2
tsp pepper
1
can (15 oz) of whole kernel corn, drained
4
cups of milk (I use lowfat and it works just fine
2
cups cubed potatoes
shredded sharp cheddar
chopped green onion
Directions
1.
Cut sausage into 1/2 inch cubes. Melt butter in large saucepan over medium heat. Add chopped yellow onion; cook and stir until tender. Add flour, salt and pepper; cook, stirring constantly for 1 minute.

Add milk. Increase heat to medium-high and bring to a boil, stirring constantly. Boil and stir 1 minute. Add corn and sausage; return to a boil. Reduce heat to medium-low and simmer 10 minutes. Stir in potatoes; heat through.
3.
Top each serving with sharp cheddar and chopped green onion.
