Baked Sweet Potato Chips

Personally, I love sweet potatoes in any form. My kids, however, are a real big fan of anything crispy, which is why these baked sweet potato chips go over so well in my house! All you need is a little homemade ketchup(link) and you’ll have them dipping for days before they realize they’re accidentally being healthy!

Serves 3people
large sweet potatoes
tbs melted coconut oil
tsp dried rosemary
tsp sea salt
First, preheat your oven to 250 degrees F.
Peel sweet potatoes and slice thinly and uniformly, using either a mandolin or sharp knife. If chips are too thick or too thin they will not cook evenly.
In a large bowl, toss sweet potatoes with coconut oil, rosemary, and salt.
Place sweet potato chips in a single layer on baking sheet covered with parchment paper. You can rotate the pan for more even cooking. Half way through the cooking, flip the chips over. For the last ten minutes, closely watch the chips and remove any chips that start to brown, until all of the chips are cooked evenly. Cooking time is 2 hours. When removed from the oven let the chips rest for 10 minutes and they will become more crispy.
