Gluten Free Blueberry Muffins

These wholesome and delicious guilt-­free muffins are definitely a family-favorite in my house. Drizzle them in some agave syrup for a little extra sweetness, and just wait for the “One more, please!”

Ingredients

cup almond flour
1/2
tsp baking soda
1/2
tsp pink salt
1/3
cup dried coconut
3
pastured organic eggs
1/3
cup maple syrup
1
tsp vanilla extract
6
tbs coconut oil
1
cup fresh blueberries
Directions
1.
Preheat oven to 350 degrees F.
2.
In a bowl, combine dry ingredients: ­almond flour, baking soda, dried coconut and pink salt.
3.
In a separate bowl, combine wet ingredients:­ eggs, maple syrup, vanilla, and coconut oil.
4.
Combine both mixtures together. Add blueberries and fold in. Try not to over-mix so the blueberries don’t get crushed.
5.
Add to muffin liners.
6.
Bake in oven for 20-­30 minutes, or until golden brown.
