Gluten Free Almond Chicken Fingers

Chicken fingers are a classic. Unfortunately, the cute little dino-shaped nuggets from the store are full of long, hard-to-pronounce ingredients I don’t want my kids scarfing down after school. These almond meal fingers do just as well as filling hungry tummies without all the flavors and artificial meat.

Ingredients

lb chicken tenders (or skinless chicken breast, cut into strips)

egg­, beaten
1
?2 cup almond meal
3
?4 tsp italian seasoning
1
?4 tsp pepper
1
?2 tsp salt
Directions
1.
Preheat oven to 425F. Line a large baking sheet with parchment paper.
2.
Cut chicken into bite sized strips.
3.
Combine almond meal with italian seasoning, salt and pepper.
4.
Place beaten egg in a separate bowl.
5.
Dip chicken strip in egg mixture and then dip in almond meal mixture, coating all sides. Place on baking sheet.
6.
Repeat until all chicken tenders are coated.
7.
Bake for 16-­18 minutes, flipping onto other side in the middle of baking, until completely cooked.
