Mommom's Flank Steak & Marinade

This has always been a family favorite Love, Mommom

Serves 10people
Ingredients
score the steak on both sides in a diamond pattern not too deep
marinade will give the meat added flavor and tenderness
3
tbs of minced scallion or shallots
1 1/2
tbs of soy sauce
2
tbs olive oil
1/2
tsp of thyme or Italian seasoning
big pinch of pepper or drops of tabasco
juice of 1/2 lemon
Directions
1.
Mix marinade ingredients and put flank steak in plastic bag
2.
Add marinade and let sit for a least 20 minutes or refrigerate for several hours or a day or two
3.
Broil steak (if want to grill boil marinade and pour over meat before serving)
4.
Let broiler heat to red hot
5.
Broil for 3 mins on both sides
6.
Steak should be rosey rare
7.
Flank steak should be carved in very thin slices across the grain of the meat
8.
Carve in wide thin slices your knife always angled always flat to the board
9.
Pour carving juice and pan juices over meat
10.
Optional: add whole onion and oregano to the marinade and put onion right on top of steak
11.
Once steak is done, let onions cook for a bit longer
