Blueberry Scones

Ingredients

cups Flour
1/3
cup Sugar
1
tbsp Baking Powder
1/2
tsp Salt
7
tbsp Cold Unsalted Butter
1 1/2
cups Fresh Blueberries
1
Large Egg
1/2
cup Heave Cream
1
Small Orange (Zest)
1
tsp Vanilla Extract
Directions
1.
In a large bowl, whisk the flour, sugar, baking powder and salt.
2.
Cut butter into small pieces and drop into flour mixture.
3.
Use a pastry blender to coat the butter until butter pieces are no larger than the size of peas.
4.
Stir in blueberries.
5.
In a separate bowl, whisk the egg, heavy cream, zest and vanilla.
6.
Mix the wet ingredients into the flour/butter mixture until just moistened.
7.
Gently form two balls with the dough.
8.
Place dough onto a floured surface and flatten to form a disk.
9.
Cut each disk in quarters.
10.
Sprinkle with coarse sugar and place on a parchment lined cookie sheet.
11.
Bake until golden brown about 14 minutes.
