Oatmeal Cake

Honey and Stacy's favorite cake. This is can be eaten for dessert, a snack, or breakfast if you're Honey.

Ingredients

cup water

cup quick oatmeal

cup white sugar

cup brown sugar
1/2
cup shortening

eggs
1
tsp baking soda
1
tsp cinnamon
1 1/2
cup flour
1/2
tsp salt
1/2
tsp nutmeg
1
tsp vanilla
icing
1/4
cup milk
1/2
cup brown sugar
1/2
cup white sugar
1/2
cup butter
1
tsp vanilla
1
cup chopped nuts (pecans/walnuts)
1/2
cup coconut
Directions

Preheat oven to 325

Boil the water, add oatmeal and let stand for 20 minutes
3.
Beat together white and brown sugar with the shortening, add eggs, add vanilla

Combine the dry ingredients together in a separate bowl (flour, soda, cinnamon, nutmeg, salt)

Add the dry ingredients to the sugar mixture in batches

Add oatmeal and mix well

Place mixture in buttered 13 x 9 in pan and bake for 30-45 minutes

In a sauce pan combine milk, both sugars, butter, and vanilla. Boil for 2 minutes

Take off heat and add nuts and coconut

Pour over cake and let stand for 5 minutes before serving
