Satay Chicken Skewers

Delicious satay chicken skewer.

Ingredients
800
g Chicken thing fillets, cut into 2.5cm cubes
marinade
1 1/2
tsp lime zest
1 1/2
tbs lime juice
1
tbs coconut oil, melted
2
tbs tamari
2
tbs fish sauce
3
garlic cloves, crushed
1 1/2
tbs finely grated ginger
1 1/2
tbs ground turmeric
1
tsp ground cumin
cashew satay sauce
160
g cashews
120
almond butter
2
tbs finely grated ginger
1
red chilli, descended and finally chopped
2
tbs tamari
1
tbs sesame oil
1
tbs maple syrup
sea salt
Directions
1.
To make the marinade, combined all the ingredients in a large bowl and mix well. Add the chicken and toss until thoroughly coated. Cover and marinate for an hour in the fridge.

Soak 8 bamboo skewers in a shallow dish of cold water for at lest halt an hour. Drain.
3.
To make the cashew satay sauce, combined the cashews and almond butter in a food processor and pulse until the nuts are well ground. Add ginger and chilli and process until blended. Add the tamari, sesame oil and maple syrup and blend well. Gradually pour in 4 Tbs of water and pulse the sauce becomes smooth. If the sauce is a little too thick, simply add more water. Transfer to a serving bowl and set aside. Season with a little salt if desired.

Thread the marinated chicken cubes onto the prepared skewers and season with salt and pepper. Grill the skewers, basting with marinade and turning often.
