Dark Chocolate Mousse

A delicious dairy-free dessert to get your chocolate fix, without feeling too guilty.

Ingredients

cup sweet potato - roasted and mashed
1
tbs coconut oil - melted
1
tbs cocoa butter - melted
1
tbs honey
1/2
tsp vanilla
1/8
tsp salt
1
cup fullfat unsweetened canned coconut milk
2
tbs + 1 tsp unsweetened cocoa powder
Directions
1.
In a large bowl, mash together all ingredients except the cocoa powder. Once well combined, fold in the cocoa powder.
2.
Transfer to a food processor and blend for 3 minutes until smooth.
3.
Pour into individual dishes and pop into the fridge for 2 hours. Take out 10 minutes before serving and give it a good stir. You want it to have that whipped consistency.
