Rice Balls

Ingredients

cups of rice
12
eggs separate whites from yolk
1/3
of a bunch if fresh parsley cut up
4
cup shredded mozzarella or to taste depending how stringy u want 1 cup grated parmesan cheese
bread crumbs (to pour in dish...add as much as you need
salt n pepper
Directions
1.
Mix rice, parsley, egg yolks and cheese (mix with hands). Let rice cool a bit so you don't have "scrambled eggs" -
2.
Roll into ball and roll in egg whites - roll in bread crumbs - fry
3.
Enjoyed best when hot!!!
