Lak's Curry

Lak was one of my neighbors in Japan. She is from Tahiland and cooks this all the time for her family. This is one of daddy's favorite This dishes.

Ingredients
4
pieces chicken thighs with bone
salt
pepper
1/2
onion
2
cans coconut milk
2
minced garlic
1-2
tbsp brown sugar

potatoes
3
carrots
rice
penutes
2
tbsp yellow curry past (mae ploy)
Geen onions
can corn drained
Directions
1.
Take chicken thighs with bone in and marinade over night with salt and pepper
2.
Cook the chicken on the stove and take the bone off. Then put the chicken back on pot (about three or four pieces) add long cuts of onion
3.
Put 2 can of coconut milk (add two cans if double) with two tablespoons (or more )of yellow curry past(mae ploy ) and Add two-pieces minced garlic
4.
Cook for 15 minutes on med high with lid on.
5.
Then add about a cup or half chk stalk with and about two tablespoons of brown sugar (looks dark ) then boil
6.
Add chunks of potato and carrots 4 pot, 3 carrots and corn.
7.
Simmer on low for about hour to two hours
8.
Then add green onion and peanuts should see oil on top when done.
9.
Put over rice
10.
For a mixture of brown and white rice. Soak brown rice for two hours and add two puts of white rice and one brown to rice cooker and add water about inch over. Cook and serve!!!
