Mema's Carrot Cake

My grandma's famous cake

Ingredients

cups flour
2
cups sugar
2
tsp Cinnamon
1
tsp Salt
2
tsp Baking soda
1 1/2
cups Wesson Oil
4
eggs
3
grated carrots
1
cup chopped pecans
8
oz cream cheese
1
stick of butter
1
tsp Vanilla
1
box of powdered sugar
Directions
1.
Sift flour, baking soda, cinnamon and salt.
2.
All chopped pecans to the flour to coat the nuts.
3.
Add sugar and stir to mix.
4.
Beat the eggs lightly and then add oil and carrots. Beat again (mix well).
5.
Gradually add dry ingredients and mix.
6.
Bake in two 9” pans or 1 oblong pan. Grease and dust the pan(s) with flour.
7.
Bake for 45 minutes at 350 degrees.
8.
To make cream cheese icing, mix together cream cheese, butter, vanilla and powdered sugar. Spread on cake.
