Aunt Bern's Tomato Tarts

pam cooking spray

sheet of frozen puff pastry
flour (for rolling pastry
olive oil

cup of grated cheddar cheese

plum tomatoes from aunt bern’s garden, sliced 1/4 inch

tbsp of Aunt Bern’s fresh thyme, chopped fine
1/2
cup grated Parmesan
salt and pepper
Directions

Preheat oven to 375*. Spray a baking sheet with PAM. Remove the puff pastry sheet from the freezer

and allow it to thaw for about 15-20 minutes.

Unfold the pastry, sprinkle with flour to avoid sticking and roll it out to remove the creases. Brush olive

oil on the dough and using a biscuit cutter (2 inch), cut out rounds. Place the pastry rounds on the

baking sheet and poke several holes with a fork to prevent the pastry from puffing too high.

Top each round with some cheddar cheese, then with a slice of tomato. Sprinkle a bit of salt, pepper
7.
and thyme and about a teaspoon of parmesan.
8.
Bake for 15 minutes and let cool for a minute before enjoying!
