Clam Bisque

My favorite soup

Serves 4people
Ingredients
1
can 10 oz. clams (whole)
1
pt of half and half
1
egg yolk
1
medium size onion, chopped fine
2
tbs butter
2
tbs flour
1
tsp Worcestershire sauce
Directions
1.
Drain clams reserving juice. Set aside juice and clams.
2.
Mix the egg yolk into the pint of half and half.
3.
Saute onion in butter until tender.
4.
Then add flour and Worcestershire sauce, will be lumpy like paste.
5.
Add clam juice and keep stirring.
6.
When mixture starts getting thick (like gravy) add half and half mixture and clams. Cover over medium heat, do not boil.
