Taco Soup

Great on a chilly night.

Ingredients
1
- pound ground beef
1
- (15.5 ounce) can pinto beans
1
- (15.25 ounce) can whole kernel corn
1
- (15 ounce) can ranch beans (undrained)
1
- (15 ounce) can of black beans
1
- (14.5 ounce) can of green beans
1
- (14.5 ounce) can stewed tomatoes
1
- (12 ounce) can of beer
1
- (10 ounce) can diced tomatoes and green chilies
1
- pack of taco seasoning
1
- pack ranch dressing mix
5
- corn tortillas
1
- cup shredded cheddar cheese
Directions
1.
Brown beef over medium high heat in a large deep skillet or stockpot. stirring until it crumbles and is no longer pink.
2.
Drain beef and return pot to stove.
3.
Rinse and drain the pinto beans, corn, black beans and green beans. Stir all of these into the beef.
4.
Stir in the Ranch beans with it's sauce.
5.
Add the next 5 ingredients and bring to a boil.
6.
Reduce heat and simmer for 30 minutes.
7.
Cut corn tortillas into 1/4" strips and place on a baking sheet. Spray lightly with PAM and sprinkle lightly with salt.
8.
Bake these at 400 for 5-8 minutes. Remove and let cool a bit.
9.
Ladle soup into bowl, sprinkle with some cheese and add some tortilla strips.
