Green Beans & New Potatoes

This is a classic side dish for any meal.

Ingredients

- pounds fresh green beans
1/2
- poound good bacon cut into 1" pieces

- cups chicken broth
1/2
- 1 - tsp. salt to taste

- small red potatoes
1
- onion cut into slivers
fresh black pepper
Directions
1.
Remove both ends from green beans and snap in half. Wash and drain beans.
2.
In a large cast iron skillet, cook bacon, until mostly done. Remove half the bacon and set aside. Discard bacon grease.
3.
Add green beans to the pot and stir well.
4.
Add broth and salt. Cook over medium low heat, covered, until beans are half done (about 30 minutes).
5.
At the end of 30 minutes, add the potatoes and onion to the beans, and 1/4 cup more stock if needed.
6.
Cook covered tightly until potatoes are tender (25-30 minutes). Make sure small amount of liquid remains.
7.
When the potatoes are tender tilt the lid slight off the side of the pot and continue to cook until beans are completely wilted (about 15 minutes). Add the rest of the bacon and season with pepper.
