Egg Rolls

Ingredients

- pound lean pork

- tablespoons oil

- egg roll wrappers
4
- cups oil for deep frying
marinade for pork

- teaspoon cornstarch
2
- teaspoons dry sherry
1
- tablespoon soy sauce
1/2
- pound bean sprouts
4
- stalks celery
2
- green onions
sauce
1/2
- teaspoon sugar
1
- teaspoon cornstarch
1
- tablespoon water
1
- tablespoon soy sauce
Directions
1.
Dice the pork into small pieces. Add the marinade ingredients to the meat and toss to coat thoroughly; let stand for 30 minutes or longer.
2.
Rinse bean sprouts in a pot of cold water and drain well.

Shred celery and green onions
4.
Combine sauce ingredients in a small bowl.
5.
Heat 2 tablespoons oil in wok over high heat. Add bean sprouts, celery and 1 teaspoon salt; stir fry for 1-2 minutes. Transfer to colander to drain.
6.
Wipe the wok dry and add 3 tablespoons oil. When hot, add green onions and pork; stir fry for 2 minutes.
7.
Return vegetables to the wok; add sauce, siring for a few seconds. Remove to a colander and cool to room temperature.
8.
Fill egg roll wrappers with mixture and fry in hot oil.
