Nana's Potato Casserole

This casserole is great served with Janet's brisket. It can easily be made ahead of time. If you want to get fancy you can mix in all the cheese make buttered bread crumbs to sprinkle over the top. To make buttered bread crumbs butter 2-3 slices of bread and then grate the bread, using a cheese grater, over a paper towel.

Ingredients

32 ounce bag frozen hash brown potatoes
1/2
cup butter or margarine, melted
1/2
cup chopped onion
1
tsp salt
1/2
tsp pepper
1
can cream of potato soup
2
cups (1 pint) low fat sour cream
10
ozs grated cheddar cheese
Directions
1.
Preheat oven to 350°. Spray a 9 X 13 inch casserole dish with Pam.
2.
In a skillet over medium heat melt butter. Add onion and sauté until clear.
3.
Mix all ingredients together, saving some grated cheese to sprinkle on top.
4.
Bake, uncovered, for 50 minutes.
5.
Watch casserole the last 15 minutes of baking. Once it reaches the desired golden brown color cover with a sheet of foil for the remainder of the cooking time.
