Fried Rice

The entire cooking time for this dish is less than 10 minutes and moves very quickly. The secret is to prepare vegetables and measure out ingredients before you begin cooking. Adjust the ingredients to suite you own tastes. Serve with edamame and egg rolls.

Ingredients

cup small broccoli florets

eggs

tbs water

tbs vegetable oil, divided use
1
tbs minced peeled fresh ginger
2
garlic cloves, minced
4
cup cooked rice, chilled
1/2
cup grated carrot
1/4
cup chicken broth
2
tbs soy sauce
2
tsp sesame oil
1/4
tsp salt
Directions
1.
Cook broccoli in microwave for 3 - 4 minutes. Set aside.

Beat eggs and water together. Heat 1 teaspoon oil in a large nonstick skillet over medium high heat. add egg mixture and soft scramble eggs stirring constantly. Remove eggs from pan and set aside.
3.
Add 2 teaspoons oil to pan. Add ginger and garlic to pan. Stir-fry 30 seconds.
4.
Add rice and stir-fry 3 minutes.
5.
Add broccoli, carrot, and chicken broth. Cook 1 minute.
6.
Add eggs, soy sauce, sesame oil, and salt. Stir-fry 1 minute or until thoroughly heated.
