Red Skin Mashed Potatoes

This is a good alternative recipe to basic mashed potatoes. It goes especially well with grilled dishes.

Ingredients

- 8 medium red skin potatoes, washed and cubed
1/2
cup buttermilk
1/4
cup butter or margarine
1
heaping tablespoon mayonnaise
1/2
tsp garlic powder
salt and pepper to taste
Directions
1.
Wash the potatoes and remove any dirt. Dice potatoes.
2.
Place potatoes in a medium sized saucepot. Cover with about 1 inch of water.
3.
Place pot over medium high heat and bring to a boil. Boil for 20-25 minutes.
4.
Drain and mash potatoes.
5.
Add buttermilk, butter or margarine, mayonnaise, garlic powder, salt and pepper. Stir well.
6.
Taste test for seasoning and adjust, if needed.
