Mimi's Gooseberry Pie

This was Papa's favorite pie. Mimi made it for his birthday every year. It is a tart pie and goes well with ice cream. Gooseberries can be hard to find. We have had to order canned gooseberries through Amazon. I like Princes brand the best. You will need to order three 300 gram cans for a normal size pie. I like to add a couple shakes of cinnamon to the sugar mixture.

Ingredients
1
box Pillsbury pie crusts
1 1/2
cups sugar
1/4
cup flour
1/4
tsp salt
2
cans of gooseberries
1
tbs butter or margarine
Directions
1.
Preheat oven to 400°. Place one pie crust in the bottom of a pie plate.
2.
Mix sugar, flour, and salt in a bowl and mix with a whisk. Set aside.
3.
Drain one can of gooseberries. Pour into pie. Add second can with the juice.
4.
Pour sugar mixture to top of gooseberries.
5.
Dot top of sugar mixture with butter or margarine.
6.
Put top piecrust on and crimp the edges of the pie. Sprinkle sugar on top of pie.
7.
Cut about 8 slits in the top pie crust.
8.
Bake for 40-50 minutes.
