Pumpkin Gingerbread Bars

This is one of Dad's favorites! It can be served as breakfast or dessert. The taste reminds me of Fall!

Ingredients

eggs
1
cup brown sugar
15
ozs canned pumpkin
4
tbs molasses
2
tsp vanilla
1 1/2
cups flour
2
tsp baking powder
2
tsp cinnamon
2
tsp ginger
2
tbs powdered sugar
Directions
1.
Preheat oven to 375°. Spray a 9 X 13 casserole dish with Pam.
2.
Beat the eggs at high speed for about 2 minutes.
3.
Add the brown sugar one tablespoon at a time, beating well after each addition.
4.
Add the pumpkin, molasses and vanilla. Beat at medium speed for 2 minutes.
5.
In a separate bowl, combine flour, baking powder, cinnamon, and ginger. Add to the pumpkin mixture and stir well.
6.
Pour the batter into the prepared pan. Bake 30 minutes or until a wooden toothpick inserted in the center comes out clean.
7.
Let cool for 10 minutes. Invert the pan over a platter or cutting board. Sprinkle with powdered sugar while still warm and cut into bars.
