Oven Roasted Potatoes

This recipe can be adjusted using different kinds of potatoes - red skinned, white skinned, or a mixed variety. You can also change the seasoning. Instead of onion soup mix, you can use 1 tablespoon of garlic salt, onion salt, or fresh rosemary. If you need to serve more you can add a couple more potatoes, the seasoning will stretch to accommodate them.

envelope lipton onion soup mix

medium potatoes (about 2 pounds)

cup olive oil
Directions
1.
Preheat oven to 425°.

Scrub potatoes to remove all the dirt. Dice the potatoes into uniform chunks.
3.
In a large mixing bowl combine the soup mix and olive oil.
4.
Add the potatoes and coat well.
5.
Pour potatoes onto a cookie sheet with sides or a shallow roasting pan. Separate potatoes so they are not touching.
6.
Bake for about 35 minutes until golden brown. Turning every 10 - 15 minutes.
