Minty Pea And Potato Soup

Ingredients

tsp vegetable oil
1
onion
800
g potatoes
1
litre vegetable stock
350
g frozen peas (or fresh)
1
handful of mint
Directions
1.
Heat oil in pot, fry onion for 5 minutes. Add potatoes and stock. Bring to the boil.
2.
Cover, simmer for 10-15 minutes and add peas 2 minutes before finishing.
3.
Use spoon to remove vegetables and blend in batches until smooth. Stir through chopped mint and season with salt and pepper.
