Potato, Bacon And Leek Soup

A salty, smooth, and filling soup. Perfect for winter!

Ingredients

tbs olive oil
2
leeks, white part only, sliced
5
bacon rashers, chopped
1
kg potatoes, peeled and chopped
1
L chicken stock
375
mL can evaporated light milk (or cream)
parsley or chives for garnish
Directions
1.
Heat oil in large pot over low heat
2.
Cook bacon and leek for 5 minutes or until leek is soft. Add potatoes and mix to coat in the lovely flavours of the leek and bacon.
3.
Add stock and bring to the boil. Turn heat down to low, cover, and simmer for 30 minutes.
4.
Allow to cool slightly, then use a stab-mixer to puree (or blend in batches).
5.
Stir through evaporated milk and serve sprinkled with parsley or chives.
