Butternut Squash Soup

Don't let the squash part scare you: this is very tasty.

Ingredients

tbs butter
1
large yellow onion, diced
4
-5 tbsp. curry powder
2
package of pre-peeled and chopped butternut squash (or 3 lbs. of the squash that you peel and chop)
2
granny smith apples, peeled, core removed, and chopped
3
cup chicken broth (Swanson's Organic is a good one

cup apple juice
1
tbs salt
1
tsp pepper
Directions
1.
Melt the butter in a pot and then add the copped onions and curry power. Cook over low heat until the onions are very tender (about 25 minutes). Stir now and then so nothing burns at the bottom of the pan.

When the onions are tender, add the chicken broth, squash, salt, pepper, and the apples, and bring to a boil. Then reduce the heat and simmer, partially covered, until the squash and apples are tender (about 25 minutes).
3.
Using a blender (immersion or "regular" blender) puree the soup so it's smooth. Then add the apple juice and stir.
