Homemade Ginger Ale

This tastes awfully close to the cans you buy in the store, and it's MUCH healthier for you. No guilt!!

Serves 4people
Ingredients
about 2 inches of fresh ginger (skin and all)
2
cup water
unflavored seltzer water
stevia (a sweetener)
Directions
1.
Grate the ginger using a grater. You should have about 1-1/2 to 2 tbsp. of grated ginger.
2.
Place the grated ginger in a cooking pan and add the 2 c. water.
3.
Cover and let cook on low heat for about 40 minutes.
4.
Let cool.
5.
You now have concentrated ginger water.
6.
Fill a glass with 1/2 of the concentrated ginger water and the rest of the glass with the seltzer water.
7.
Add 1/2 packet of Stevia (a little goes a long way).
8.
And that's all there is to it!
