Minnie Johnson's Fried Chicken

Savannah means fried chicken. Can be at Mrs. Wilkes Boarding House, Johnny Harris Restaurant, Alma's at the Raskins. My mom learned lots about cooking from Minnie Johnson who worked for David & Ethyl.

Serves 6people
Ingredients
12
pieces Chicken with skin
2
cups Flour
1
tbls Salt
2
tsp Pepper
Directions
1.
Mix Flour with Salt and Pepper in a paper bag
2.
Put Chicken pieces in bag and shake
3.
Using Cast Iron Skillet, fill with Oil about 1/2 to 3/4 full and turn burner to high
4.
Use small pieces of white bread to test oil temperature - if bread turns brown almost immediately, the oil is ready
5.
Gently place Chicken in skillet cooking 10-15 minutes on one side
6.
Turn over with Tongs (be careful, y'hear) and cook about 10 minutes on other side
7.
Note: Wings will cook quicker that larger pieces
8.
Remove and put on layers of paper towels
9.
Serve with buttermilk biscuits and lots of soul food
