Ethyl's Okra Gumbo

One of the many dishes that Ethyl and my mom could have snuck into Mrs. Wilkes' Dining Room and not been out of place. Great side dish on white rice and takes shrimp (aka scrimps) too

Serves 8people
Ingredients
1
lb Fresh Okra chopped 1/4" - 1/2" pieces (or frozen if necessary)
28
oz can Diced Tomatoes
1
small can Tomaro sauce
1
Large Onion
1
Large Clove Garlic (crushed or chopped)
1
Red Pepper diced
1
Bay leaf
1/4
tsp Dried Thyme
1/2
tsp Basil
1
cup Butter beans (optional)
Directions
1.
Saute diced Onion, diced Red Pepper, and Garlic
2.
Season with Salt and Pepper
3.
Cook on Medium High so Onions get soft, but do not burn or turn brown
4.
Combine all ingredients and bring to a simmer. Turn down heat to low
5.
Cook 25-30 minutes, stir occasionally so nothing sticks or burns
6.
Note: If you want it spicier, add Tabasco
7.
Taste and correct seasoning as needed
8.
Serve with white rice and cornbread
