Italian Roast Beef Sandwhiches

beef eye of round roast, about 2 pounds

ozs can crushed tomatoes, undrained

cup beef broth
1/4
cup pepperoncini pepper- chopped

tbsp red wine vinegar

tsp dried oregano

Italian rolls or hoagie rolls
Directions
1.
Preheat oven to 325. Combine oil, garlic, salt & pepper. Pierce beef roast at 1". Rub roast with garlic mixture. Place in shallow roasting pan

Roast until medium. Tent loosely with aluminum foil and let stand 20 minutes. Thinly slice roast

Combine tomatoes, broth, pepperoncini, vinegar, and oregano in saucepan; bring to boil and remove from heat. Stir sliced meat into tomato mixture and serve on rolls.
