Pumpkin Muffins.

This muffin recipe was delicious and perfect for Thanksgiving time. The pumpkin spice and pumpkin puree gave a great flavor, and the muffins weren’t too dry either. The recipe was fun but easy to make at the same time. I would suggest adding some cinnamon to the batter to make the muffins more flavorful. In addition, when we made this recipe we used water, but using orange juice instead might have put an interesting and unique spin on the recipe.

Ingredients

cup unsalted butter 3 cups all purpose flour

tsp pumpkin pie spice

tsp baking soda

tsp salt

cup granulated sugar

cup pure solid pack canned pumpkin
2
large eggs
1/2
cup vegetable oil
1/2
cup water (or orange juice)
3/4
cup packed dark brown sugar
3/4
cup sugar
Directions
1.
Preheat oven to 350 degree F.

Combine flour, pumpkin pie spice, baking soda and salt in a large bowl.

Combine sugar, pumpkin, eggs, oil and water into large bowl; beat until blended.

Add dry ingredients (flour mixture) to wet ingredients (pumpkin mixture) and just stir until moistened.
5.
Spoon into paper liners or muffin tin filling ¾ full.
6.
Bake for 25 minutes or until a wooden toothpick inserted in centers comes out clean. Cool on wire racks.
