Ginger Molasses Crinkles

Sweet and soft and full of flavor! These were my favorites when I was a kid, and one day when my mother was at work I decided to take it upon myself to make them. To this day I am not sure what I did wrong, but instead of cookies, I created ginger rocks that were too hard for even our golden retriever, Butterscotch, to eat. And that dog would eat anything! I'm happy to say that as an adult I've finally mastered these.

Ingredients

cup shortening, melted and cooled

cup sugar
1/4
cup dark molasses
1
beaten egg
2
cup flour
2
tsp baking soda
1
tsp cinnamon
1/2
tsp ginger
1/2
tsp cloves
sugar for rolling
Directions
1.
Mix together melted and cooled shortening, sugar, and molasses. Add beaten egg and stir.

Sift together dry ingredients (flour, baking soda, spices).
3.
Add dry ingredients to wet and mix together until fully blended. Refrigerate for an hour (or more).
4.
Preheat oven to 375. Roll dough into 1" balls and then roll in granulated sugar. Place on cookie sheet about 2" apart and bake for 8-10 minutes. Cool on sheet for a minute, then transfer cookies to cooling rack to finish.
