Spray four 7x3" loaf pans with cooking spray until lightly coated. Preheat oven to 350°F (176 degrees C). In a small bowl, stir together white sugar and cinnamon. Dust pans lightly with cinnamon and sugar mixture.

In a large mixing bowl, cream butter and brown and white sugar. Mix in eggs, mashed bananas, sour cream, vanilla, rum and cinnamon. Mix in salt, baking soda, and flour. Stir in nuts. Stir in the coconut. Divide into prepared pans. Sprinkle with 1 tablespoon coconut.

Bake for 1 hour, or until a toothpick inserted in the center comes out clean.

Combine powdered sugar and juice, stirring with a whisk; drizzle over warm bread. Cool completely on wire rack.
