Adam's (And Harriet's) Irish (And French) Beef Stew

My mom makes an outstanding traditional French beef stew - Daube. In high school, friends and I made a Guinness beef stew (with lots of tasting to be sure). Santé and slàinte

Ingredients
3
lb Beef Stew (Round or Cubed - lean)
1
can Diced Tomatoes or 1 1/2 lbs Ripe Diced Tomatoes
1
Large Onion, diced
1
small bag Baby Carrots
2
cloved Garlic
1/2
lb Mushrooms, cut in half
1
tbls Olive Oil
1
cup Beef Stock
1
can or bottle Guinness
1
Bay Leaf
Directions
1.
Heat Oil in saute pan
2.
Brown Beef on all sides
3.
Remove to Dutch Oven
4.
Saute Onions, Garlic and Mushrooms until soft (around 4 minutes)
5.
Deglaze brown bits in pan with 1/2 cup broth (or red wine)
6.
Layer vegetables and Beef. Add Bouillon or Stock
7.
Bring to boil and reduce to simmer
8.
Put covered dutch oven in pre-heated 350 degree oven
9.
Cook for about 1 1/2 - 2 hours
10.
Check to make sure liquid is almost covering; if necessary, add more beer/broth
