Buffalo Chicken Cheese Balls

Ingredients

store-bought rotisserie chicken
1/4
cup hot sauce
1
tsp ground black pepper
1 3/4
cups shredded sharp cheddar cheese
1/4
cup sliced fresh scallions
1
cup flour
3
eggs lightly beaten
2
cups panko bread crumbs
vegetable oil, for frying
Directions
1.
have oil heated to 350 degrees F

Pick the meat off of the chicken and discard the skin
3.
place chicken in large bowl and add hot sauce, pepper, cheese, and scallions.

Toss to combine
5.
Roll the chicken mixture into about the size of a golf ball
6.
Place the flour, eggs, and breadcrumbs in 3 separate bowls.
7.
Roll each ball in flour, then egg, then breadcrumbs, set aside.
8.
When oil is hot, fry the balls about 2 minutes per batch
9.
Rest on paper towel when done frying
Serve with Ranch
