Any smoked white fish will work for this recipe. I like a fresh smoked mackerel or wahoo. Depending on how dry the fish is will dictate the amount of wet you'll need to add. I like it to be firmer/drier than tuna fish.

Rough chop the fish and add to mixing bowl.

Add citrus juice and tabasco (to taste) evenly over the fish.

Season fish with salt and pepper

Add Mayo and Sour cream. With a large fork blend everything together very well.

Line small bowl/ramekin with plastic wrap. Place one pickled Jalapeno in bottom of bowl

Spoon mixture into bowl to top forming a smooth top.

Invert serving plate over mixture and flip both as one. Remove bowl and plastic wrap.
9.
Garnish with something green, serve with crackers, Green Tabasco, and pickled Jalapenos.
