Ginger Tripe Berry Bars

Ingredients

cup all-purpose flour
1 1/2
cup rolled oats
2/3
cup packed brown sugar
3/4
cup (1 1/2 sticks) unsalted butter, melted
1
tsp ground ginger
1
tsp vanilla extract
1/2
tsp ground cinnamon
1/2
tsp salt
2
cup strawberries, sliced
1
cup rasberries
1
cup blueberries
1/3
cup granulated sugar
2
tbs lemon juice
1
tbs cornstarch
1
tbs candied ginger (i use a bit more)
Directions
1.
Heat oven to 325 degrees.
2.
Coat 13 x 9 x 2-inch baking dish with nonstick spray.
3.
In a large bowl combine first 8 ingredients.
4.
Press half the flour mixture into prepared baking dish.
5.
Combine berries with remaining ingredients.
6.
Spoon evenly over flour mixture in baking dish.
7.
Crumble remaining flour mixture and press down gently.
8.
Bake 45 to 55 minutes, until top is browned, and fruit fulling is bubbling.
9.
Cool completely and cut into 12 bars.
