Tea Fruit Loaf

Ingredients
1
cup sultanas
3/4
cup chopped raisins
1/2
cup red glazed cherries, halved
1
cup caster sugar
1 1/4
cup boiling water
2
english breakfast tea bags
1
egg, lightly beaten
2
cup self-raising flour
1
tsp mixed spice
1/4
cup ginger marmalade
butter to serve (optional)
Directions
1.
Combine fruit and sugar in a large bowl.
2.
Pour boiling water over tea bags; soak for 5 minutes then discard tea bags.
3.
Pour tea over the fruit mixture and stir until the sugar is dissolved.
4.
Once the sugar is dissolved, cover the mixture and let it sit for 12 hours or over night.
5.
Grease a 14cm x 21cm loaf pan. Line the base of the pan with baking paper and extend the side edges by 5cm.
6.
Add egg, sifted dry ingredients and marmalade to the fruit mixture until well combine.
7.
Pour mixture into prepared pan and cook in a slow oven on 150°C for about 75 minutes or until cooked.
